Spicy Pork Carnita Soup Cooking for 2
This spicy, savory soup is just enough for the two of you! It's ready in 35 minutes, so it's easy to throw together any night of the week. It comes to us from our Betty Crocker Right-Size Recipes cooking for 2 cookbook.
Ingredient
- 1 tablespoon olive oil
- 1 medium onion, halved, thinly sliced
- 1 green bell pepper, cut into strips
- 1 cup Progresso™ Classic chicken broth (from 32-oz carton)
- 1/2 cup beer
- 1 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin
- 1 can (10.5 oz) diced tomatoes with green chiles, undrained
- 2 boneless pork loin chops, trimmed of fat and cut into 1/2-inch cubes (about 8 oz)
- 1 tablespoon chopped fresh cilantro leaves
- 1 tablespoon fresh lime juice
- Cilantro leaves, if desired
Direction
- In 2-quart saucepan, heat olive oil over medium heat. Add onion and pepper; cook 4 to 5 minutes or until vegetables are tender. Stir in chicken broth, beer, chili powder, salt, cumin and tomatoes.
- Heat to boiling; reduce heat. Cover and simmer 5 minutes. Stir in pork; cover and simmer 5 to 8 minutes or until pork is no longer pink in center. Stir in chopped cilantro and lime juice. Garnish with cilantro leaves.
